The curriculum walks through the philosophy of nutrition and Ayurveda, then moves into the body-mind-soul model of food and the Ayurvedic concept of digestion and dhatus (tissues). You will study the principles of Ayurvedic dietetics, twenty qualities (guna) of food, energetic principles of food substances, and the rules around compatible and incompatible food combinations.
From there the program becomes practical. You will learn to apply diet principles by mind type, body type (prakruti), seasons, and life stage, and explore foods for weight and metabolism management. Specialized chapters cover Ayurvedic nutrition in pregnancy, kitchen herbs and their health benefits, the role of khichdi, herbal teas and decoctions, and diet protocols for Ama detox.
